This recipe is light and refreshing and perfect for warm weather.


250g cherries

Zest from ¼ of a lemon

1 small bunch of finely chopped basil

250g ricotta

2tsp balsamic vinegar

1tsp olive oil

4 slices ciabatta

Salt and pepper to taste


  1. Preheat a grill and brush each side of the bread with a little oil. Toast the bread on each side to create nice char marks.
  2. Slice the cherries in half and remove stalks and pips. Mix gently in a bowl with the vinegar, salt, and pepper. Set aside.
  3. Place the ricotta in a food processor with a pinch of salt and pepper and the lemon zest and blend for a few seconds until creamy.
  4. Put a generous amount of ricotta on each slice of toast, and top with cherries and basil.

Serves two as a starter
