These crispy chipotle shredded beef tacos are packed with smoky, spicy flavours and are sure to become a crowd favourite. Tender beef with a kick of chipotle seasoning is paired with fresh toppings and crispy taco shells for the perfect taco night dish.

Ingredients:

  • 1 kg beef chuck roast
  • 1 tbsp olive oil
  • 2 chipotle chillies in adobo sauce, chopped
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 cup beef stock
  • 12 small corn tortillas
  • 1 tbsp vegetable oil (for frying)
  • Fresh coriander, chopped (for garnish)
  • Lime wedges (for serving)

Toppings:

  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sour cream
  • 1/2 cup shredded cheddar cheese

Method:

  1. Heat the olive oil in a large pot over medium heat. Brown the beef chuck roast on all sides, then remove and set aside.
  2. In the same pot, sauté the onion and garlic until soft. Add the chopped chipotle chillies, cumin, and smoked paprika, and cook for another minute.
  3. Return the beef to the pot, pour in the beef stock, and cover. Reduce the heat and simmer for 3–4 hours until the beef is tender and shreds easily.
  4. Shred the beef with two forks and mix it with the sauce left in the pot.
  5. Heat vegetable oil in a frying pan and lightly fry the corn tortillas until crispy.
  6. Fill each taco with shredded beef and your choice of toppings.
