Ingredients:

  • 500g salmon fillets
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 8 small corn tortillas
  • 200g red cabbage, thinly sliced
  • 1 avocado, sliced
  • 1 lime, cut into wedges
  • Fresh coriander, for garnish

For the Yoghurt Sauce:

  • 150ml Greek yoghurt
  • 1 tbsp lime juice
  • 1 tsp honey
  • 1/2 tsp cumin
  • Salt, to taste

Instructions:

  1. Preheat your oven to 200°C. Line a baking tray with baking paper.
  2. Place the salmon fillets on the tray. Drizzle with olive oil and sprinkle with paprika, garlic powder, salt, and pepper. Rub the seasonings over the salmon to coat evenly.
  3. Bake the salmon for 12-15 minutes or until it flakes easily with a fork. Once cooked, remove from the oven and let it cool slightly. Then, using a fork, flake the salmon into large pieces.
  4. While the salmon is baking, prepare the yoghurt sauce. In a small bowl, mix together Greek yoghurt, lime juice, honey, cumin, and salt. Adjust the seasoning to your taste.
  5. Warm the tortillas in a dry pan over medium heat for about 30 seconds on each side.
  6. To assemble the tacos, place a handful of red cabbage on each tortilla, add some flaked salmon, and a few slices of avocado. Drizzle with the yoghurt sauce and garnish with fresh coriander.
  7. Serve with lime wedges on the side for extra zest.
