Ingredients:
- 500g salmon fillets
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- Salt and pepper, to taste
- 8 small corn tortillas
- 200g red cabbage, thinly sliced
- 1 avocado, sliced
- 1 lime, cut into wedges
- Fresh coriander, for garnish
For the Yoghurt Sauce:
- 150ml Greek yoghurt
- 1 tbsp lime juice
- 1 tsp honey
- 1/2 tsp cumin
- Salt, to taste
Instructions:
- Preheat your oven to 200°C. Line a baking tray with baking paper.
- Place the salmon fillets on the tray. Drizzle with olive oil and sprinkle with paprika, garlic powder, salt, and pepper. Rub the seasonings over the salmon to coat evenly.
- Bake the salmon for 12-15 minutes or until it flakes easily with a fork. Once cooked, remove from the oven and let it cool slightly. Then, using a fork, flake the salmon into large pieces.
- While the salmon is baking, prepare the yoghurt sauce. In a small bowl, mix together Greek yoghurt, lime juice, honey, cumin, and salt. Adjust the seasoning to your taste.
- Warm the tortillas in a dry pan over medium heat for about 30 seconds on each side.
- To assemble the tacos, place a handful of red cabbage on each tortilla, add some flaked salmon, and a few slices of avocado. Drizzle with the yoghurt sauce and garnish with fresh coriander.
