Ingredients:
- 4 large leeks, trimmed and halved lengthwise
- 2 tablespoons olive oil
- 2 tablespoons white miso paste
- 1 tablespoon honey
- 250ml vegetable stock
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- Salt and pepper, to taste
- Fresh chives or parsley, finely chopped, for garnish
Method:
- Preheat your oven to 180°C (160°C fan-forced).
- In a large ovenproof frying pan, heat the olive oil over medium heat. Add the leeks, cut side down, and cook for 4-5 minutes until they start to caramelise and turn golden brown.
- In a small bowl, whisk together the miso paste, honey, vegetable stock, soy sauce, and rice vinegar until well combined.
- Pour the miso mixture over the leeks, ensuring they are evenly coated. Season with salt and pepper to taste.
- Cover the pan with a lid or aluminium foil and transfer it to the preheated oven. Bake for 25-30 minutes, or until the leeks are tender and the sauce has thickened slightly.
- Remove the pan from the oven and carefully uncover. Let the leeks rest for a few minutes before serving.
- Garnish with fresh chives or parsley and serve warm.
