Miso braised leeks are a deliciously savoury and slightly sweet side dish that pairs beautifully with a variety of mains. The mellow flavour of the leeks is enhanced by the umami richness of miso, while a touch of honey adds a subtle sweetness that balances the dish. This recipe is simple yet elegant, making it perfect for both weeknight dinners and special occasions.

Ingredients:

  • 4 large leeks, trimmed and halved lengthwise
  • 2 tablespoons olive oil
  • 2 tablespoons white miso paste
  • 1 tablespoon honey
  • 250ml vegetable stock
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • Salt and pepper, to taste
  • Fresh chives or parsley, finely chopped, for garnish

Method:

  1. Preheat your oven to 180°C (160°C fan-forced).
  2. In a large ovenproof frying pan, heat the olive oil over medium heat. Add the leeks, cut side down, and cook for 4-5 minutes until they start to caramelise and turn golden brown.
  3. In a small bowl, whisk together the miso paste, honey, vegetable stock, soy sauce, and rice vinegar until well combined.
  4. Pour the miso mixture over the leeks, ensuring they are evenly coated. Season with salt and pepper to taste.
  5. Cover the pan with a lid or aluminium foil and transfer it to the preheated oven. Bake for 25-30 minutes, or until the leeks are tender and the sauce has thickened slightly.
  6. Remove the pan from the oven and carefully uncover. Let the leeks rest for a few minutes before serving.
  7. Garnish with fresh chives or parsley and serve warm.
