For the Chicken Patties:


  • 500 grams of ground chicken
  • 2 tablespoons of sour cream
  • 1 teaspoon of freshly chopped rosemary
  • 2 teaspoons of kosher salt
  • 1 teaspoon of cayenne powder
  • 2 teaspoons of garlic paste
  • Zest of 1 lemon
  • Optional: 1 teaspoon of preserved lemon paste
  • 3 tablespoons of chopped chives
  • 2 tablespoons of olive oil


For the Cauliflower Mash:


  • 1/2 head of cauliflower, chopped into florets (approximately 6 cups)
  • 2 tablespoons of butter
  • 2 tablespoons of heavy cream
  • 1/2 cup of finely grated Parmesan cheese
  • Pinch of nutmeg
  • Salt to taste


To make the Chicken Patties:

  1. In a medium bowl, combine the ground chicken, sour cream, chopped rosemary, kosher salt, cayenne powder, garlic paste, and lemon zest. If desired, add the preserved lemon paste and chives to enhance the flavour.
  2. Mix all the ingredients until well combined. Divide the mixture into four equal portions and shape them into patties.
  3. Heat olive oil in a skillet over medium heat. Place the chicken patties in the skillet and cook for approximately 5-8 minutes per side, or until they are cooked through and golden brown.


For the Cauliflower Mash:


  1. In a large pot, add the cauliflower florets and cover them with water. Add a generous pinch of salt to the water and bring it to a boil. Simmer for about 15-20 minutes, or until the cauliflower becomes soft and tender.
  2. Drain the cooked cauliflower and transfer it to a food processor. Add the butter, heavy cream, grated Parmesan cheese, nutmeg, and salt to taste.
  3. Puree the ingredients in the food processor until smooth and creamy. For an even smoother texture, pass the mixture through a sieve.
