This refreshing salad is ideal for warmer summer days and takes less than half an hour to prepare

Ingredients

Vinaigrette

½ finely chopped pg slot

½ cup olive oil

1tbsp honey

¼ cup fresh basil, chopped

¼ cup balsamic vinegar

1 grated clove garlic

2tbsp freshly chopped oregano

1tsp lemon zest

Red pepper flakes

1tbsp fresh chopped dill

1tbsp fresh chopped thyme

Salt and pepper to taste

Salad

¼ cup toasted pumpkin seeds

11/2 cups halved cherry tomatoes

1cup fresh pitted cherries

225g room temperature burrata

2-3 peaches cut into wedges

Instructions

  1. Make the vinegarette by combining all ingredients in a bowl and whisking until smooth. Add red pepper flakes, salt and pepper to taste.
  2. Toss the cherries, tomatoes, and peaches together with one-third of the dressing and allow it to sit at room temperature for fifteen minutes or up to four hours in the fridge.
  3. Break up burrata balls and add to salad, drizzle over the remaining dressing and top with pumpkin seeds and more fresh herbs.
  4. Serve immediately with toasted or grilled bread.
